Responsibilities: The Chef de Cuisine is responsible for all aspects of the restaurant's kitchen. They will be responsible for helping to create and maintain quality experiences for each guest, while balancing profitability metrics. They will lead the culinary team as an extremely efficient individual with a passion for executing food excellence and the ability to motivate a team. Our Chef de Cuisine will lead the culinary team by spending most of their day coaching and working side by side with the crewmembers while they are preparing food, cooking food, and cleaning the kitchen.We are looking for an organized and professional Chef de Cuisine who is familiar enough with all kitchen positions to cover for absent employees or determine appropriate replacements if needed. You must also have the necessary interpersonal and communication skills to lead, influence, and encourage others while demonstrating honesty and integrity, as well as leading by example. Essential Job Functions Supervises and coordinates activities concerning all back-of- house operations and personnel within the restaurant. Directs the assignment, training and motivation of personnel. Actively contributes in menu creation and planning and food production, and apportions meats, vegetables, and desserts as well as food surpluses to control food costs. Supervises food preparation personnel to ensure food adheres to standards of quality and supervises cleanliness of kitchen and equipment. Works closely with the Executive Chef to document, investigate and resolve all employee and guest incidents including guest complaints. GENERAL QUALIFICATIONS: EXPERIENCE, KNOWLEDGE, SKILLS Eight to Ten (8-10) years of experience in a restaurant and customer service setting including at least five (5) years of Management. Must be able to communicate politely and effectively with guests and other employees. Good working knowledge of kitchen equipment and procedures, safety and sanitation regulations, and knowledge of food and food production. Computer skills are necessary. Ability to create a positive guest experience You must be able to pass a thorough background check. EDUCATION/LICENSURE/CERTIFICATIONS College level coursework in management, restaurant management, or other business related field desired. Minimum high school graduate with emphasis on skill training. SENSORY/PHYSICAL/MENTAL REQUIREMENTS Must be physically able to work any station in a kitchen or serving/bar environment. Should be able to life 50-60 pounds on a continuing basis. Long hours of standing. Able to work in extreme temperatures.
